Indian Cuisine is so varied that only an expert can write a book about it. Since this is a tourism site and I am no chef, I am going to mention the most known dishes with the purpose of helping my readers identify them when traveling to India.
Idli-Dosa-Vada with Sambar is an Indian Breakfast Dish
This is a South Indian breakfast dish mad of fermented black lentils and rice with sambar, a vegetable stew made with tamarind.
This is a popular dish and by the way, very healthy as declared by the World Health Organization. It has proteins of the lentils and does not contain fatty ingredients
Dal-Bati, Raabdi & Ghevar
Indian Butter Chicken
This chicken is marinated overnight in yoghurt and spices then cooked on a special sauce of butter, tomato puree and many spices giving this dish a special flavor.
Kebabs
This dish is universal in the Middle East and Asia. These are pieces of meat shredded on a skewer. Fruit and vegetables, like peppers and onions are also included on the skewer to give it a better taste.
Lassi
This is a traditional yoghurt-based drink, popular in India and Pakistan. It is made by blending yoghurt with Indian spices flavored with roasted cumin. The variation of Sweet Lasi is blended with fruits and sugar instead of spices.
Typical Mughlai Cuisine of India
The name comes from the Royal Mughal Emperors in India. It is an elaborated buffet of main dishes with an array of side dishes.
The preparation of this food consists of favored sauces and butter based curries. They are plain very tasty.
Aloo Paratha
Paratha are flatbread made of whole wheat. The addition of Aloo means that they are stuffed with potatoes or various other fillings.
The variations are Gobhi Paratha, Onion Paratha, mostly eaten during breakfast.
Indian Hilsha Fish cooked on Banana Leafs
Ilish Fish Paturi
A preparation of Hilsha Fish cooked in Banana Leaf along with a range of spices. This is one of the most famous of all the Bengali Cuisine.
Bengalis prefer fish more than anything else. The staple food of Bengali people is rice and fish, being the most popular salmon, Hilsha, bhekti, magur, carp, rui and prawns.
Biryani a rice-based food
Are rice-based food made with spices and meat, fish, eggs or just vegetables, for the vegetarians among us.
Tandoori Chicken
This chicken is marinated in yoghurt and seasoned with tandoori masala, traditionally cooked in Tandoor (clay oven).
Palak Paneer
This is a treat for vegetarians. It is made out of spinach and cottage cheese in a curry sauce. This dish is essential in the Punjabi Cuisine.

Chole-Bhature
This dish combines Bhatoora, bread made of maida floor, and Chole, spicy chick peas. It is mainly a breakfast dish.
Daal Makhani
Beans and lentils traditionally cooked in a tangy masala, served with fresh cream.
Indian Malai Kofta fried veggie balls
Malai, means cream and Kofta are fried veggie balls blend together in a spicy Indian curry sauce. This is the vegetarian version of the famous kofta meatball curries.
Naan-Parathas
This is a variety of Indian flatbread. Naan is baked while Paratha is usually filled with vegetables.
Samosa and Pakodas
Popular appetizers served at tea time, before the main meal. These are triangular pastries stuffed with a tasty filling.

This is a tasty soup made of tomatoes, tamarinds and dal. It is known as a highly healthy food because its digestive qualities.
Aloo Gobi is a traditional Indian and Pakistani dish
This is a traditional Indian and Pakistani dish made of onions, cauliflower, potatoes and Indian spices.
Indian Rasmalai is a sugary cream
This is a sugary cream on top of yellow colored balls of paneer soaked in malai flavored with cardamom
Indian Rasgulla is a cheese based sweet dish
This is a cheese based sweet dish made from balls of Indian Cottage Cheese called Chena.
Indian Ladoo is a sweet dish
This is a sweet dish made of gram flour, semolina, wheat flakes, prepared usually on festive occasions.
Panipuri Chaat a typical dish of Indian Cuisine
This is a hollow puri, crispy fried and filled with a mixture of chilli, chaat masala a tamarind water with potato, onions and chickpeas.
Poori-Halwa
This is a breakfast dish made of a deep fried flat bread called puri amd halwa, a sweet made of semolina.
Pickles
In India they make an array of pickles of fruits and vegetables, acidified with lime or lemon juice.
